Top chefs all over the planet, improve other food by wrapping it in bacon. That is how brilliant bacon is.
With this being my own personal view on bacon, I’m sure you can imagine the magnitude of the situation when I arrived in Shanghai, only to find a distinct lack of ‘proper’ bacon. However, it was this realisation that meant my wife Sarah and I embarked on the challenge of finding, curing, supplying and eating real, British style back bacon.
Amelia’s has produced streaky, American style bacon for some time now, which in its own way is delicious, however, it’s not quite what we eat ‘back home’. The process of sourcing the right cut of meat was a long arduous process of trial and error between ourselves and a Chinese butcher. It involved lots of pictures, printouts and diagrams before he learnt exactly where and what to cut. Eventually though, we succeeded, and stage one was complete. Next up was curing…
This was tough, it meant bringing curing salts in from England, which in essence, meant filling our suitcases with dubious bags of powder, something we were never too enthusiastic to do. The light at the end of tunnel however was close, that being the hungover Sunday morning, when we were going to awake to a fridge full of our bacon.
So last summer we finally got it looking and tasting as we hoped. An unsurprising amount of friends were keen to be ‘bacon-testers’, and the feedback was very positive. It’s since gone from strength to strength, with plenty of happy customers in Pantry and several restaurants around the city deciding it’s the right bacon for them too.
